iEdit is a text editor with an integrated file browser, image viewer, and HTML viewer.
If you need a fast and efficient text editor that can also view images and HTML in your iPhone or iPod Touch’s file system then you’re in luck, iEdit can do all of those. Navigate around with the file browser to find the files you’d like to view. Depending on if they are just text files, HTML files, or images, you’ll have to change the viewing mode on the bottom. It seems like it cannot change modes on it’s own depending on the file type. You can even create folders in the file browser. Typing is how you would expect it on an iPhone, just a blank screen and you can put whatever you want in there and save it. Simple.

I tried this, but after trying iFile, find it a lot more useful. Of course, iFile isn’t free, but it’s worth the price they charge, especially if you want to edit config files and what not, on the go.
